WIJNDOMEIN MERGELSBERG X HOEVE DE BIES

A distinguished collaboration between two artisans from Noorbeek. In 2021, a remarkable 100-liter French oak cask was commissioned at Hoeve de Bies, sourced from Wijndomein Mergelsberg.

This vessel carries considerable provenance, having previously matured Cabernet Sauvignon and Pinot Noir under the stewardship of winemakers Peter and Steyn Mergelsberg, whose expertise and terroir knowledge remain imprinted within its grain. 

This spirit benefits from the nuanced aromatic character the cask imparts – subtle tannin structures and vinous undertones that have accumulated within the oak's cellular matrix over years of wine maturation. The resulting distillate presents remarkable complexity and depth, bearing the unmistakable influence of both domains. It represents a thoughtful exploration of the intersection between wine and spirits, embodying the shared vision and craftsmanship of two dedicated producers who understand that exceptional spirits begin with exceptional wood.

Proces

The Mergelsberg Whiskey originates from a remarkable cask donated in 2021 by Wijndomein Mergelsberg in Noorbeek: a 100-liter French oak barrique previously used to mature Cabernet Sauvignon and Pinot Noir, under the care of winemakers Peter and Steyn Mergelsberg.

After being carefully selected, the barrel was entrusted with the maturation of our Limburg whiskey. The wood, enriched by its years of wine aging, imparts subtle notes of dark fruit, vanilla and gentle spice. This process merges the tradition of winemaking with the art of distillation, resulting in a spirit that is at once powerful and refined.

Each bottle is hand-bottled, individually numbered and finished with a unique label, preserving the craftsmanship, terroir and distinctive story of Noorbeek.
Taste

Soft and inviting, with aromas of ripe red fruit, delicate vanilla and light spice. The barrel’s previous use for Cabernet Sauvignon and Pinot Noir contributes a vinous bouquet with elegant oak character.

Rounded and layered, with a full body. Flavors of dark berries and subtle cocoa are balanced by light tannic structure and gentle oak. The finish is long, refined and warmly spiced.
